Cool Rhubarb Iced Tea Recipe

A delicious way to add a flavorful twist to your ice tea. Absolutely refreshing in the summertime!

Ingredients

  • 10 stalks fresh rhubarb, chopped
  • 8 bags black tea
  • 2 cup white sugar, or to taste
  • 1 quart water
  • 1 quart water
  • 1 tbsp. honey
  • 1 cup white sugar

Instructions

  1. Place rhubarb into a large pot with the sugar and 1 quart of water.
  2. Bring to a boil, then simmer over low heat for about 4 hours, stirring occasionally to prevent burning, until rhubarb becomes a thick paste.
  3. Cool, then spoon into ice cube trays and freeze overnight.
  4. Bring 1 quart of water to a boil.
  5. Pour into a pitcher over the tea bags.
  6. Stir in honey and sugar.
  7. Cool, then refrigerate until chilled.
  8. Serve cold ice tea with rhubarb ice cubes.
