
How To Make Spicy Thai Noodles with Peanut Sauce
These Thai noodles with healthy and colorful veggies are cooked in a slightly sweet and spicy sauce that has peanut butter, lime juice, and ginger.
Serves:
Ingredients
- 12ozdry spaghetti
- 1largered bell pepper,sliced into thin strips then cut into 2 inch pieces
- 1largecucumber,peeled, seeded and sliced into thin strips then cut into 2 inch pieces
- 1cupmatchstick carrots
- ¾cupgreen onions,chopped
- ½cupcilantro,chopped
- ½cuppeanuts,roasted, lightly salted, and roughly chopped
- Sesame seeds,for garnish, optional
For Peanut Sauce:
- ½cupcreamy peanut butter
- ¼cupwarm water
- 3tbspsoy sauce
- 2tbsphoney
- 2tbspsriracha,more or less to taste
- 2tbspfresh lime juice
- 1½tbspfresh ginger,peeled and minced
- 1tbspgarlic,minced
- 1tbspsesame oil
Instructions

Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.

Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly.

Sprinkle with sesame seeds and serve.
