How To Make Spicy Thai Noodles with Peanut Sauce

These Thai noodles with healthy and colorful veggies are cooked in a slightly sweet and spicy sauce that has peanut butter, lime juice, and ginger.

  • 12ozdry spaghetti
  • 1largered bell pepper,sliced into thin strips then cut into 2 inch pieces
  • 1largecucumber,peeled, seeded and sliced into thin strips then cut into 2 inch pieces
  • 1cupmatchstick carrots
  • ¾cupgreen onions,chopped
  • ½cupcilantro,chopped
  • ½cuppeanuts,roasted, lightly salted, and roughly chopped
  • Sesame seeds,for garnish, optional

For Peanut Sauce:

  • ½cupcreamy peanut butter
  • ¼cupwarm water
  • 3tbspsoy sauce
  • 2tbsphoney
  • 2tbspsriracha,more or less to taste
  • 2tbspfresh lime juice
  • tbspfresh ginger,peeled and minced
  • 1tbspgarlic,minced
  • 1tbspsesame oil


  1. Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.

  2. Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly.

  3. Sprinkle with sesame seeds and serve.
