
How To Make Quick Peanut Soba Noodles
An easy to make peanut soba noodles tossed with healthy green veggies, fresh herbs and spices, and a savory peanut sauce. Whip this up in just 20 minutes!

Ingredients
For Noodles:
- 9ozsoba noodles
- 2Persian cucumbers,or 1 English cucumber, thinly sliced
- 2scallions,thinly sliced
- â…”cupfresh cilantro,chopped
- â…”cupedamame,shelled
- sesame seeds,toasted, for sprinkling
For Peanut Sauce:
- ¼cupnatural peanut butter
- ¼cuplime juice,freshly-squeezed
- 2tbspsoy sauce,low-sodium
- 2tbsprice vinegar
- 1tbsphoney,or maple syrup
- 1tbspsesame oil,toasted
- ½tspground ginger
Instructions

Cook the soba noodles until al dente according to package instructions. Drain completely, then rinse with cold water until chilled. Set aside.

Meanwhile, as the noodles are cooking, whisk together the peanut butter, lime juice, soy sauce, rice vinegar, honey, sesame oil, and ground ginger until combined.

In a large mixing bowl, combine the chilled soba noodles, cucumbers, scallions, cilantro, edamame, and peanut sauce. Toss until evenly combined. Taste and season with extra soy sauce, if needed.

Serve immediately, sprinkled with toasted sesame seeds, and enjoy!
