How To Make Peanut Ginger Noodles
A creamy sauce of peanut butter, garlic, lime, & ginger creates a Thai-inspired base for this noodles recipe. There’s some healthy crunch from the broccoli.

Ingredients
- 2½tsplime peel,grated
- ¼cuplime juice
- 2tbspreduced sodium soy sauce
- 2tspwater
- 1tspsesame oil
- ⅓cupcreamy peanut butter
- 2½tspfresh ginger root,minced
- 2clovesgarlic,minced
- ¼tspsalt
- ¼tsppepper
- 8ozwhole wheat linguine,uncooked
- 2cupsfresh broccoli florets
- ½cupcarrots,shredded
- 1sweet red pepper,julienned
- 2green onions,chopped for garnish
Instructions

Place lime peel, lime juice, soy sauce, water, sesame oil, peanut butter, ginger, garlic, salt and pepper into a food processor and process until blended.

Cook linguine according to package directions. Add in broccoli the last 5 minutes to cook. Drain

Put the linguine and broccoli in a large bowl. Add carrots and red pepper. Add the peanut butter sauce and toss to combine.
