How To Make Peanut Ginger Noodles

A creamy sauce of peanut butter, garlic, lime, & ginger creates a Thai-inspired base for this noodles recipe. There’s some healthy crunch from the broccoli.

  • tsplime peel,grated
  • ¼cuplime juice
  • 2tbspreduced sodium soy sauce
  • 2tspwater
  • 1tspsesame oil
  • cupcreamy peanut butter
  • tspfresh ginger root,minced
  • 2clovesgarlic,minced
  • ¼tspsalt
  • ¼tsppepper
  • 8ozwhole wheat linguine,uncooked
  • 2cupsfresh broccoli florets
  • ½cupcarrots,shredded
  • 1sweet red pepper,julienned
  • 2green onions,chopped for garnish


  1. Place lime peel, lime juice, soy sauce, water, sesame oil, peanut butter, ginger, garlic, salt and pepper into a food processor and process until blended.

  2. Cook linguine according to package directions. Add in broccoli the last 5 minutes to cook. Drain

  3. Put the linguine and broccoli in a large bowl. Add carrots and red pepper. Add the peanut butter sauce and toss to combine.
