This Thai noodles dish is creamy with a distinct peanut flavor that blends with spicy Sriracha and sesame oil for a sweet and spicy overall taste.

Serves:

Ingredients

  • 8ozdry pasta,linguine or spaghetti
  • 1tbspvegetable oil
  • 1tspginger,grated
  • 2clovesgarlic,minced
  • ½cupcarrots,julienned
  • cupscabbage,thinly sliced
  • ¼cupbean sprouts,optional
  • green onions,for garnish
  • cilantro,for garnish
  • peanuts,for garnish, crushed

For Sauce:

  • ½cupchicken broth
  • 2tbspsoy sauce
  • 2tbspcreamy peanut butter
  • 1tspSriracha,or to taste
  • tspsesame oil
  • 1tbspbrown sugar
  • ¼tspred pepper flakes,crushed, optional

Instructions

  1. Combine sauce ingredients in a small bowl. Set aside.

  2. Cook pasta according to package directions. Drain well, do not rinse.

  3. Meanwhile, cook ginger and garlic in vegetable oil until fragrant.

  4. Add carrots and cabbage and cook for 2 to 3 minutes or until slightly tender. Add sauce ingredients while stirring over medium heat and simmer for about 2 to 3 minutes until thickened.

  5. Stir in noodles and bean sprouts. Garnish with crushed peanuts, cilantro, and green onions.

  6. Serve and enjoy.
