How To Make Diabetic Gingerbread Cookies
Soft and chewy gingerbread cookies that are low in sugar and perfect for those with diabetes!
Serves:
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp baking soda
- 1/4 tsp xanthan gum
- 1/4 cup unsalted butter, softened
- 1/4 cup monkfruit sweetener
- 1 egg
- 2 tbsp molasses
Instructions

Preheat oven to 350°F.

In a medium bowl, whisk together almond flour, coconut flour, ginger, cinnamon, cloves, baking soda, and xanthan gum.

In a separate bowl, beat butter and monkfruit sweetener until light and fluffy.

Beat in egg and molasses until well combined.

Add dry ingredients to wet mixture and mix until dough forms.

Roll dough into 1-inch balls and place on baking sheet lined with parchment paper.

Bake for 12-15 minutes.

Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
