Spinach and artichoke are perfect for these quiche cups due to their complimenting earthy taste with a slight hint of a minty flavor. Try it at home!

Ingredients

  • 14½ozartichoke heartsdrained and chopped
  • 1packagefrozen spinachdrained
  • 5eggswhisked
  • ¾cupmozzarella cheeseshredded
  • cupmilk
  • ½cupwhite onionchopped
  • ¼cupParmesan Cheesegrated
  • 2cloves garlicminced
  • ¼tspsalt
  • ¼tsppepper

Instructions

  1. Preheat oven to 350 degrees F. Prepare 12 baking cups by either spraying them liberally with cooking spray, or lining them with paper liners.

  2. Stir all ingredients together in a large mixing bowl until combined. Portion the mixture into the 12 prepared baking cups so that they are all nearly full.

  3. Bake for about 20 minutes, or until the eggs are set. Serve immediately.
