  • 1 store-bought pie crust
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1/2 cup fresh basil leaves, chopped
  • 1 cup grated Parmesan cheese
  • 4 eggs
  • 1 cup milk
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the pie crust and press it into a 9-inch pie dish. Trim any excess crust.

  3. In a bowl, toss the cherry tomatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 15 minutes.

  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper.

  5. Sprinkle half of the grated Parmesan cheese onto the pie crust. Top with the roasted tomatoes and chopped basil.

  6. Pour the egg mixture over the tomatoes and basil. Sprinkle the remaining Parmesan cheese on top.

  7. Bake for 30-35 minutes, or until the quiche is set and golden brown.

  8. Allow the quiche to cool for a few minutes before slicing and serving.
