How To Make Crustless Spinach Quiche
This quick and easy crustless spinach quiche made with cheese, spinach, peppers, and eggs lets you enjoy a savory quiche in under an hour.

Ingredients
- 1tbspvegetable oil
- 1medium onion,chopped, about 1 cup
- 1tspgarlic,minced
- 10ozfrozen spinach,(1 package) chopped, thawed and drained
- 5large eggs,beaten
- 2½cupsmuenster cheese,shredded or use whatever’s on hand
- ¼cupparmesan cheese,grated, plus 2 tbsp more for garnish, optional
- ¼tspsalt
- ¼tspblack pepper,freshly ground
- pinch of red pepper,crushed
Instructions

Preheat oven to 350 degrees F. Lightly grease a 9-inch pie pan.

Heat oil in a large skillet over medium-high heat. Add garlic and onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.

In a large bowl, combine eggs, cheese, salt, pepper, and crushed red pepper. Add in spinach mixture and stir to blend. Pour into prepared pie pan.

Bake in the preheated oven until eggs have set and the top is slightly browned for about 25 to 30 minutes.

Remove and let cool for 10 minutes. Top with additional freshly grated parmesan cheese before serving.
