  • 1 pre-made pie crust
  • 1 tbsp olive oil
  • 1 leek, sliced
  • 8 oz mushrooms, sliced
  • 1 cup gruyère cheese, shredded
  • 4 large eggs
  • 1 cup heavy cream
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the pie crust in a pie dish and set aside.

  3. Heat olive oil in a pan over medium heat. Add leeks and mushrooms, and sauté until softened, about 5 minutes.

  4. In a bowl, whisk together eggs, heavy cream, salt, and pepper.

  5. Spread the leek and mushroom mixture onto the pie crust. Sprinkle gruyère cheese on top.

  6. Pour the egg mixture over the cheese and vegetables.

  7. Bake for 35-40 minutes until the filling is set and the crust is golden brown.

  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
