How To Make Texas Cheese Fries
These savory cheese fries are loaded with crispy bacon and melted cheddar, then baked until golden brown for a slightly healthier but equally filling bite!

Ingredients
- 2medium potatoes,(5½ oz each), yukon gold or russet, washed and dried
- 2tspolive oil
- 1tspsmoked paprika
- ¼tspchili powder
- ¼tsponion powder
- ¼tspgarlic powder
- ⅛tspcumin
- coarse salt and fresh cracked pepper
- 1bacon slice,center cut, cooked, finely chopped
- ⅓cupsharp cheddar cheese,shredded
- 2tbspscallions,diced
- 1tbsppickled Jalapeno,sliced, jarred or canned
Instructions

Preheat the oven to 450 degrees F. Line the baking sheet with foil, then lightly coat with cooking spray.

Cut each potato lengthwise into ¼ inch thin slices, then cut each slice into ¼ inch fries.

In a large bowl, combine the cut potatoes and oil, then toss well. Add the paprika, chili powder, onion powder, garlic powder, cumin, salt. and pepper. Toss to coat.

Place the potatoes in a single layer, then bake in the bottom third of the oven for 10 minutes. Turn and bake an additional 8 to 10 minutes, or until crisp and browned.

Remove from the oven, then top with cheddar cheese, sliced jalapenos, scallions and bacon bits.

Return to the oven for 1 to 2 minutes, or until the cheese melts.
