How To Make Sheet Pan Home Fries

Crispy on the outside but soft in the center, these savory home fries made with baked red potatoes, carrots, and bell pepper will brighten up your mornings.

Ingredients

  • 20ozbaby red potatoes,cut into ½-inch pieces
  • 1small onion,chopped fine
  • 1green bell pepper,diced
  • 2carrots,5 oz total, chopped
  • tbspolive oil,extra virgin
  • tspkosher salt
  • fresh cracked black pepper

Instructions

  1. Preheat oven to 375 degrees F. Line a sheet pan with nonstick foil or spray with oil.

  2. Combine all the ingredients in a large bowl and toss well. Transfer to the sheet pan and spread in a single layer.

  3. Roast in the bottom rack for 15 minutes. Turn and roast an additional 25 to 30 minutes, or until golden brown and cooked through.

  4. Serve with eggs and enjoy!
