How To Make Crispy Zucchini Fries
One great way to use those summer zucchini harvests is to make these crispy zucchini fries. Coated in parmesan & panko, they’re served with chipotle sauce.
Serves:
Ingredients
- 2large zucchini
- 1egg
- 1tbspmilk
- 1cuppanko bread crumbs
- ½cupparmesan cheese
- 2tspolive oil
- ½tspgarlic powder
- ½tsppepper
- ¼tspseasoning salt
- 1tbspfresh parsley
For Dressing:
- ⅓cupmayonnaise,or dressing
- ¼cupsour cream
- 1chipotle in Adobo,or more to taste
- 1tsplime juice
Instructions
Chipotle Mayonnaise:

Combine all ingredients and blend until smooth. Set aside.
Zucchini Fries:

Preheat oven to 400 degrees F.

Combine Panko bread crumbs, parmesan cheese, pepper & olive oil. Mix well and set aside.

Wash zucchini and cut into fries (leaving skin on).

Beat egg & milk together. Toss zucchini in the egg and milk mixture.

Dip each zucchini fry into the bread crumb mixture, pressing the crumbs to make sure they stick.

Place on a parchment lined pan and spray with cooking spray. Bake 18 to 20 minutes or until crust is crispy.
