  • 2 chicken breasts
  • olive oil (extra virgin )
  • salt and pepper (to taste)
  • 2 tbsp butter (divided)
  • 1 onion (chopped)
  • 1 cup red wine
  • ½ cup chicken broth
  • 2 tbsp balsamic vinegar
  • 12 oz pitted cherries (fresh or frozen)
  • 1 tsp fresh thyme (chopped )
  • ½ lemon
  1. Brush chicken breasts with extra virgin olive oil and season them with salt and pepper.
  2. Heat a large skillet over medium-high heat and then add the seasoned chicken.
  3. Pan-fry the chicken breasts for 4 to 5 minutes on each side. Remove and cover with foil to keep warm.
