Preparation: 10 minutes
Cooking: 40 minutes
Total: 50 minutes

Serves:

Ingredients

  • 1.5 pounds of round steak, cut into 4 pieces
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. In a shallow dish, combine flour, salt, and pepper. Dredge each piece of steak in the flour mixture, shaking off any excess.

  2. Press the “Saute” button on the Instant Pot® and heat vegetable oil. Brown the steak on both sides, working in batches if necessary. Remove steak from the Instant Pot® and set aside.

  3. Add onion and garlic to the Instant Pot® and saute until softened, about 3 minutes.

  4. Stir in diced tomatoes, beef broth, Worcestershire sauce, thyme, and paprika. Return the steak to the Instant Pot® and close the lid.

  5. Set the Instant Pot® to Manual mode and cook on high pressure for 20 minutes.

  6. Once the cooking time is complete, let the pressure release naturally for 10 minutes before performing a quick release.

  7. Serve the Swiss steak over mashed potatoes or rice, spooning the sauce over the top.
