Ingredients

  • 1 1/2 cups dried red beans, soaked overnight and drained
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 celery ribs, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 4 cups chicken broth
  • 1 pound smoked sausage, sliced
  • 4 cups cooked white rice
  • Salt to taste
  • Chopped green onions, for garnish

Instructions

  1. Press the Saute function on the Instant Pot and heat the vegetable oil. Add the onion, bell pepper, celery, and garlic.

  2. Saute for 3-4 minutes until the vegetables are softened.

  3. Add the soaked red beans, thyme, smoked paprika, cayenne pepper, black pepper, and bay leaf. Stir everything together.

  4. Pour in the chicken broth and add the sliced smoked sausage on top.

  5. Close the Instant Pot lid and set the valve to the sealing position. Press the Manual or Pressure Cook button and set the

  6. timer to 35 minutes on high pressure.

  7. Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick

  8. pressure release to release any remaining pressure.

  9. Open the Instant Pot and discard the bay leaf. Taste the beans and adjust the seasoning with salt if needed.

  10. Serve the red beans and sausage over cooked white rice. Garnish with chopped green onions.
