Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup chicken broth

Instructions

  1. Remove giblets from the chicken cavity and pat it dry with paper towels.

  2. In a small bowl, combine the salt, black pepper, garlic powder, paprika, dried thyme, and dried rosemary.

  3. Rub the olive oil all over the chicken, then sprinkle the spice mixture evenly on the chicken, rubbing it gently to adhere.

  4. Place the trivet into the Instant Pot and pour in the chicken broth.

  5. Carefully place the seasoned chicken on the trivet, breast-side up.

  6. Close the lid of the Instant Pot, make sure the valve is set to “Sealing”, and select the “Manual” or “Pressure Cook” mode. Set the cooking time to 45 minutes at high pressure.

  7. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then do a quick release by turning the valve to “Venting.”

  8. Carefully remove the chicken from the Instant Pot and let it rest for 5-10 minutes before carving.

  9. Serve the roasted whole chicken with your favorite side dishes.
