How To Make Diabetic Shortbread Cookies Recipe

Ingredients
- 1 cup unsalted butter
- 1/2 cup erythritol
- 2 cups almond flour
- 1 tsp vanilla essence
- 1/4 tsp salt
Instructions

Preheat oven to 175°C and line a baking sheet with parchment paper.

In a medium bowl, cream together butter and erythritol until smooth.

Add almond flour, vanilla essence and salt to the bowl and stir until mixed.

Form the dough into small balls and place them on the baking sheet.

Flatten each cookie with the back of a fork.
