Serves:

Ingredients

  • 4 grapefruits
  • 2 cups of sugar
  • 1 lemon
  • 1 cup of water

Instructions

  1. Wash the grapefruits and lemon well. Cut the grapefruits in half and squeeze out the juice. Remove any seeds and set the juice aside.

  2. Using a sharp knife, thinly slice the grapefruit peels into strips. Remove any excess pith.

  3. In a large pot, combine the grapefruit juice, sliced peels, sugar, lemon juice, and water. Stir well to combine.

  4. Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low and let it simmer for 1 hour, stirring occasionally.

  5. After an hour, the marmalade should have thickened. Remove from heat and let it cool slightly.

  6. Transfer the marmalade into clean jars and let it cool completely before refrigerating.

  7. Enjoy the grapefruit marmalade on toast, scones, or use it as a glaze for meats.
