Ingredients

  • 1 cup grated green papaya
  • 1 cup grated carrot
  • 1/4 cup grated ginger
  • 1/2 cup white vinegar
  • 1/4 cup white sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup raisins (optional)

Instructions

  1. In a large bowl, mix together the grated papaya, carrot, and ginger.

  2. In a small saucepan, combine vinegar, sugar, salt, and black pepper. Heat over medium heat until sugar is dissolved.

  3. Pour the vinegar mixture into the bowl with the grated vegetables. Mix well.

  4. Add raisins, if desired, and mix again.

  5. Let the relish sit for about 10 minutes to allow the flavors to meld together.

  6. Serve as a side dish or condiment with your favorite Filipino dishes.
