Ingredients

  • 1 pound of prickly pears, peeled and deseeded
  • 2 cups of sugar
  • 2 tbsp lemon juice
  • 1 package of pectin

Instructions

  1. In a blender, puree the prickly pears until smooth.

  2. In a large saucepan, combine the prickly pear puree, sugar, and lemon juice.

  3. Bring the mixture to a boil over medium heat, stirring constantly.

  4. Stir in the pectin and continue to cook for 1 minute.

  5. Remove from heat and let cool for 5 minutes.

  6. Pour the jelly into sterilized jars and seal.

  7. Let the jars cool to room temperature, then refrigerate for at least 4 hours to set.
