How To Make Chef John’s Apple Butter

- 6 large apples, peeled, cored, and sliced
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 2 tbsp lemon juice
- 1/4 cup apple cider
Instructions

In a large saucepan, combine the sliced apples, brown sugar, granulated sugar, cinnamon, cloves, nutmeg, lemon juice, and apple cider.

Cook over medium heat, stirring occasionally, until the apples are tender and easily mashable, about 30 minutes.

Use a potato masher to mash the cooked apples until smooth.

Reduce the heat to low and continue cooking, stirring occasionally, for another 3-4 hours, or until the apple butter thickens and darkens in color.

Remove from heat and let cool completely before transferring to jars or containers. Store in the refrigerator.
