How To Make Whole Grain Pasta Salad Recipe

A healthy, flavorful pasta salad with a mix of vegetables and whole grain pasta.

Ingredients

  • 8 oz whole grain pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cucumber, diced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package directions. Once done, drain and rinse with cold water.
  2. In a large bowl, combine tomatoes, bell pepper, red onion, cucumber, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
  4. Add pasta to the bowl of vegetables and toss with the dressing.
  5. Serve chilled and enjoy!
