Ingredients

  • 1 cup of whole grain rice
  • 2 chicken breasts, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp of olive oil
  • 1 tsp of dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook rice according to instructions.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until golden brown.
  4. Add onion and garlic and cook until onion is translucent.
  5. Add bell peppers and zucchini and cook until vegetables are tender.
  6. Add cooked rice to the skillet.
  7. Sprinkle oregano, salt, and pepper over the mixture.
  8. Stir everything together and cook until heated through.
