How To Make Whole Grain Black Bean Soup Recipe

A hearty, wholesome soup made with black beans and whole grains.

Serves:

Ingredients

  • 1 cup brown rice
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 can black beans, drained and rinsed
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: cilantro, avocado, lime wedges

Instructions

  1. Cook brown rice according to package directions.

  2. In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.

  3. Add cumin, chili powder, and oregano and stir to combine.

  4. Add black beans and vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes.

  5. Add cooked brown rice and simmer for an additional 10 minutes.

  6. Season with salt and pepper to taste.

  7. Serve with optional toppings, if desired.
