Ingredients

  • 1 cup whole grain couscous
  • 1 1/2 cups water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1 lemon, juiced

Instructions

  1. In a medium saucepan, bring water to a boil. Stir in couscous, olive oil, salt, and black pepper. Cover and remove from heat. Let stand for 10 minutes.
  2. Fluff couscous with a fork and transfer to a large bowl. Add onion, tomatoes, cucumber, olives, feta cheese, parsley, and lemon juice. Toss to combine.
  3. Serve warm or cold.
