How To Make Hawaiian Chicken Salad Sandwiches

  • lbschicken breast,cooked, chilled and shredded
  • 8ozham,cooked, chilled and diced
  • cupsfresh pineapple,diced, canned would work too, but drain well
  • 1cupcelery,diced, about 3 stalks
  • cupMacadamia nuts,or Cashews, chopped
  • 2tbspgreen onions,chopped

For Dressing:

  • cupmayonnaise
  • ¼cuppineapple juice
  • 3tbsphoney
  • 2tspapple cider vinegar
  • ½tsponion powder
  • Salt and pepper,to taste


  1. In a large mixing bowl, toss together shredded chicken, diced ham, pineapple, celery, nuts and green onions.

  2. In a separate mixing bowl, whisk together mayonnaise, pineapple juice, honey, apple cider vinegar, onion powder and season with salt and pepper to taste.

  3. Pour dressing over chicken mixture. Toss to evenly coat. Serve on Crusty Rustic Bread, Hawaiian Sweet Bread or whatever bread, roll or croissant you’d like.
