How To Make Tropical Luau Chicken Salad with Crispy Wontons

Toss a light, satisfying dish with a tropical-twist with this chicken salad. It comes with mixed green and macadamia nuts in a pineapple dressing.

Ingredients

  • mixed greens
  • leftover macadamia crusted chicken*
  • chopped pineapple,in ½ inch chunks
  • macadamia nuts
  • wonton wrappers
  • oil,for frying

For Dressing:

  • 2cupspineapple salsa
  • 3tbsprice vinegar
  • 6tbspolive oil
  • ¼cupchopped cilantro

Instructions

  1. Put mixed greens in a bowl.

  2. Top with pineapple and macadamia nuts.

  3. Chop up leftover macadamia chicken. Great eaten cold or put in 350-degree F oven for 8 to10 minutes.

  4. Combine leftover pineapple salsa with rice vinegar, olive oil, and cilantro in a food processor until smooth.
