How To Make Jerk Chicken

Ingredients
- 4 chicken leg quarters
- 1/4 cup jerk seasoning
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp dried thyme
- 1 tsp allspice
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- Salt to taste

In a bowl, combine jerk seasoning, vegetable oil, soy sauce, brown sugar, lime juice, garlic, ginger, thyme, allspice, black pepper, cayenne pepper, cinnamon, nutmeg, and salt.

Rub the jerk marinade all over the chicken leg quarters, making sure to coat them evenly. Let it marinate for at least 1 hour, or overnight for maximum flavor.

Preheat the grill to medium-high heat. Oil the grates to prevent sticking.

Place the marinated chicken leg quarters on the preheated grill and cook for 20-25 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

Remove the chicken from the grill and let it rest for a few minutes before serving.
