Enjoy a healthy and tasty salad dish with this quick and easy Copycat Panera sesame chicken salad recipe. It will let you serve fresh and crisp romaine topped with grilled chicken, toasted almonds, and herbs, with our homemade Asian Sesame Vinaigrette as dressing.

Salad

  • 2 wonton wrappers
  • 2 tbsp almonds (sliced)
  • 4 cups romaine lettuce
  • 1 tbsp fresh cilantro (chopped)
  • 3 oz boneless skinless chicken breasts (grilled and sliced)

Dressing

  • ½ cup rice vinegar
  • 4 tbsp sugar
  • 2 tbsp canola oil
  • ½ tbsp sesame oil
  • ½ tsp salt
  • ½ tsp sesame seeds
  • ½ tsp black pepper
  1. Preheat the oven to 350 degrees F.

  2. Cut the wonton wrappers into ¼ inch strips.

  3. Heat the canola oil to 365 degrees F in a heavy skillet. Fry the wonton strips.

  4. Heat about 2 inches of the canola oil to 365 degrees F in a heavy skillet. Fry the wonton strips.

  5. Spread the almonds in a baking sheet and toast the almonds in the oven for 5 minutes.

  6. Toss the almonds, then toast for 5 minutes more. Remove from oven and let cool.

  7. In a large bowl, toss the romaine lettuce, cilantro, wonton strips, and chicken.

For the dressing

  1. In a small saucepan, heat the vinegar and sugar until the sugar dissolves, stirring often. Let it cool completely.

  2. In a small bowl, mix the oils together. Whisking constantly, pour the oils into the vinegar-sugar mixture to make an emulsion.

  3. Mix in salt, pepper, and sesame seeds.

  4. Pour the dressing over the salad. Serve topped with extra sesame seeds and toasted almonds.
