How To Make Seed and Quinoa Salad Recipe

A healthy and refreshing salad made with quinoa, mixed seeds and veggies in a zesty dressing.

Serves:

Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup mixed seeds (sunflower, pumpkin, sesame)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine cooked quinoa, mixed seeds, cherry tomatoes, cucumber, red onion, parsley and mint.

  2. In a small bowl, whisk together lemon juice, olive oil, salt and pepper.

  3. Pour dressing over the salad and toss well to combine.

  4. Serve chilled.
