How To Make Flax Seed and Peanut Butter Cookies

A crunchy and nutty cookie made with the goodness of flax seeds and rich taste of peanut butter.

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup ground flax seeds
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven at 350F and line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together flour and ground flax seeds.

  3. In a separate bowl, cream together peanut butter and brown sugar. Add in egg and vanilla extract and mix well.

  4. Gradually stir in dry ingredients until a dough forms.

  5. Using a tablespoon, scoop dough and roll into balls. Flatten with a fork to create a criss-cross pattern.

  6. Bake for 12-15 minutes until lightly golden brown.

  7. Let cool for 5 minutes before transferring to a wire rack to cool completely.
