Tender chicken breasts are filled with creamy goat cheese and crunchy seed mix.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese
  • 1/4 cup seed mix (pumpkin, sunflower, sesame)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Make a pocket in each chicken breast by cutting a small slit in the center, being careful not to cut all the way through.

  3. Mix goat cheese and seed mix in a bowl.

  4. Stuff each chicken breast with 1/4 of the goat cheese mixture.

  5. Season the chicken breasts with salt and pepper.

  6. Heat olive oil in a large oven-safe skillet over medium-high heat.

  7. Sear chicken breasts until golden brown, about 2-3 minutes per side.

  8. Transfer skillet to oven and bake for 20-25 minutes, or until chicken is cooked through.

  9. Let the chicken rest for a few minutes before slicing and serving.
