Ingredients

  • 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water)
  • 1 large zucchini, grated
  • 1/3 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup ground flaxseed
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F.

  2. In a medium bowl, mix the flax egg, grated zucchini, honey, applesauce, and vanilla extract.

  3. In a separate bowl, mix together the flour, ground flaxseed, baking powder, cinnamon, and salt.

  4. Add the dry ingredients to the wet ingredients and stir until just combined.

  5. Pour the batter into a greased 9×5 inch loaf pan.

  6. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let cool before slicing and serving.
