How To Make Copycat Panda Express Kung Pao Chicken

  • 1 tbsp. peanut oil
  • 1 dried red chili
  • 12 oz. chicken breasts (boneless and cut into 1″ cubes)
  • 1 small red bell pepper (cut into 1/2″ pieces)
  • 1 green onion (cut into 1/2" pieces, with tops)
  • 2 stalks celery (cut into 3/4″ slices)
  • 2 tbsp. water
  • 2 tbsp. dry sherry
  • 1 tbsp. soy sauce
  • 1 tbsp. chili bean sauce
  • 1 tsp. sugar
  • 2 garlic cloves (minced)
  • 2 scallions (chopped)
  • 1 tsp. ginger (grated )
  • 2 tsp. rice wine
  • 8 dried green chilies (up to 10 chilies, use as desired)
  1. Heat oil in a wok and add dried chili.

  2. Mix in chicken and stir fry for 6 to 7 minutes or until chicken is cooked.

  3. Add in bell pepper, onion and celery. Cook until tender.

  4. Add remaining ingredients and cook for 5 to 6 more minutes.

  5. Serve over cooked white rice, if desired.
