Ingredients

  • 2 pounds pork shoulder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup pineapple juice
  • 1 cup chopped pineapple
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Combine garlic powder, paprika, salt, and pepper in a small bowl and rub mixture onto pork shoulder.

  2. Pour pineapple juice over pork shoulder in a slow cooker and cook on low for 8 hours.

  3. While pork is cooking, make the pineapple salsa by combining chopped pineapple, red onion, cilantro, lime juice, and salt in a bowl.

  4. About 30 minutes before serving, remove pork from slow cooker and use two forks to shred meat.

  5. Serve pork with pineapple salsa on top.
