Ingredients

  • 1 (3-pound) boneless pork loin roast
  • 3 oranges, juiced
  • 2 limes, juiced
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon fresh thyme, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a mixing bowl, whisk together orange juice, lime juice, honey, garlic, rosemary, thyme, salt, and black pepper.

  2. Place pork roast in a large plastic bag and pour the marinade over it. Marinate in the fridge for at least 2 hours or overnight.

  3. Preheat oven to 375°F.

  4. Remove pork roast from marinade and discard excess. Place pork roast in a baking dish and bake for 1 hour and 30 minutes or until the internal temperature reaches 145°F.

  5. Remove from oven, cover with foil and let it rest for 10 minutes before slicing.
