Ingredients

  • 1 pre-made pie crust
  • 1 cup fresh spinach, chopped
  • 1 cup chanterelle mushrooms, sliced
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded gruyere cheese

Instructions

  1. Preheat oven to 375°F.

  2. Line pie crust in a 9-inch pie dish.

  3. In a skillet, sauté mushrooms and spinach over medium heat until softened.

  4. In a mixing bowl, whisk eggs, cream, salt, and pepper together.

  5. Add mushroom, spinach mixture to the egg mixture and stir to combine.

  6. Pour mixture into pie crust. Sprinkle cheese on top.

  7. Bake for 45 minutes until set and golden brown.

  8. Let cool for a few minutes before serving.
