How To Make Hearty Vegetable Soup Just Like Potbelly’s

  • 2 1/2 tbsp. olive oil
  • 1 1/2 cup yellow onion (diced)
  • 3 green onions (diced)
  • 2 cups carrots peeled and chopped
  • 1 1/4 cup celery chopped
  • 4 cloves garlic (minced)
  • 14.5 oz chicken broth or vegetable broth
  • 2 medium vine ripe tomatoes sliced
  • 3 cups potatoes peeled and finely chopped
  • 2 tbsp. dried parsley
  • 2 bay leaves
  • 1/2 tsp. dried thyme
  • Salt
  • freshly ground black pepper
  1. In a large pot over medium heat saute carrots, celery, onions in olive oil for about 4 minutes or until veggies start to soften. Then add in garlic and let cook for about a minute, stirring occasionally.
  2. Pour in broth, tomatoes, potatoes, and herbs.
  3. Stirring to incorporate all the flavors.
  4. Bring contents to a boil then reduce heat to a medium low heat.
  5. Cover pot and let simmer until potatoes are tender. (25-35 minutes)

Instructions
