How To Make Potbelly Veggie Sandwich Recipe

This sandwich is a delicious and healthy option filled with fresh vegetables and flavorful sauces.

Ingredients

  • 8 slices of whole wheat bread
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced green peppers
  • 1/2 cup hummus
  • 1/4 cup balsamic vinaigrette
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 350°F.

  2. Lay out bread slices on a baking sheet and toast them in the oven for 5-8 minutes or until lightly browned.

  3. In a pan, sauté onion, mushrooms, and green peppers with a pinch of salt and black pepper until tender.

  4. Spread hummus on one side of each slice of bread.

  5. Top four slices of bread with avocado, then divide the vegetable mixture evenly among them.

  6. Drizzle balsamic vinaigrette on top of vegetables.

  7. Cover with the remaining four slices of bread to create a sandwich.

  8. Cut in half and serve.
