Ingredients

  • 1 lb shrimp, deveined and peeled
  • ¾ lb fettuccine, spaghetti, or angel hair pasta, cooked and cooled
  • 2 tbsp butter, unsalted
  • 2 cups heavy cream
  • cup white wine
  • cup parmesan cheese, powdered or grated
  • 3 oz yellow onions, minced
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • salt and ground white pepper, to taste

Marinated tomatoes:

  • lb cherry tomatoes, halved
  • ¼ cup fresh basil, thinly sliced
  • 2 tsp olive oil
  • ¼ tsp Italian seasoning
  • salt and ground black pepper, to taste

Instructions

  1. Prepare your marinated tomatoes first. Combine tomatoes with basil, olive oil, garlic, and Italian seasoning. Season with salt and pepper. Mix thoroughly.

  2. Set aside for 1 hour to marinate.

  3. Heat up the oil in a wide skillet over medium-high heat. Add shrimps and sear until caramelized on both sides, roughly 3 to 5 minutes. Set aside.

  4. Melt the butter into the same skillet. Add garlic and onions. Saute until translucent.

  5. Deglaze with white wine and reduce briefly.

  6. Add your cream and parmesan cheese. Bring this to a simmer.

  7. Add your cooked shrimp and pasta. Toss to combine.

  8. Season to taste with salt and white pepper. Adjust accordingly.

  9. Transfer your creamy shrimp pasta into a servingware of your choice. Spread out your marinated tomatoes on top and around the pasta. Serve with roughly 1 tablespoon of marinated tomatoes per serving.
