Complement any meal with this versatile spinach and prosciutto salad. It's a delectable mixture of spinach, artichoke and peppers along with some aromatics, and prosciutto and olive oil to boot.

  • 2 tbsp. olive oil
  • 10 oz. spinach, thawed and squeezed dry, frozen chopped
  • 4 oz. prosciutto, chopped, thinly sliced
  • 4 oz. roasted red peppers, drained and chopped
  • 6.5 oz. artichoke hearts, drained and sliced
  • 1 tbsp. garlic powder


  1. Heat the oil in a large skillet over medium-low heat.
  2. Add the spinach, prosciutto, red peppers and artichoke hearts.
  3. Season with garlic powder.
  4. Cook and stir for 15 minutes, until heated through.
