  • 1lbpork breakfast sausage
  • 18large eggs,divided
  • 4tbspbutter,divided
  • 1cupwhole milk,divided
  • ¼tspkosher salt
  • ½tspcoarse ground black pepper
  • ½tspground mustard
  • 12slicesTexas toast
  • 12slicesAmerican cheese


  1. Preheat oven to 375 degrees F.

  2. Cook the breakfast sausage in a large pan on medium-high heat for 4 to 5 minutes or until browned well, breaking it apart while cooking. Remove the pork and drain the fat.

  3. Add 1 tablespoon of butter to the pan on medium heat.

  4. Whisk 10 eggs with ¼ cup of milk, salt, and pepper, then add it to the pan. Scramble the eggs until just set.

  5. In a 9×13-inch pan line, the first 6 slices of toast and top each piece of bread with a slice of cheese.

  6. Add in the sausage, then the cooked eggs, and top with a piece of cheese.

  7. Mix the remaining 8 eggs, ¾ cups milk, and ground mustard in a medium bowl, then pour it over the pan gently.

  8. Top with the remaining slices of bread.

  9. Melt the remaining 3 tablespoons of butter and brush it onto the tops of the bread.

  10. Bake for 20 minutes, covered with foil.

  11. Remove the foil and bake for an additional 20 minutes.
