- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 1/4 cup chopped parsley, for garnish
Instructions

Heat the olive oil in a skillet over medium heat. Add the chicken and cook until browned. Remove the chicken from the skillet and set aside.

In the same skillet, add the onions, bell peppers, mushrooms, and garlic. Cook until the vegetables are tender.

Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute.

Slowly pour in the chicken broth, stirring constantly to prevent lumps. Bring to a simmer and cook until the mixture thickens.

Stir in the heavy cream, paprika, dried thyme, salt, and pepper. Return the chicken to the skillet and simmer for an additional 10 minutes, or until the chicken is cooked through and the sauce is thickened.
