How To Make Creamy Chicken & Pumpkin Recipe

- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup pumpkin puree
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Season the chicken breasts with salt and pepper.

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.

Add the pumpkin puree, chicken broth, heavy cream, dried thyme, salt, and pepper to the skillet. Stir to combine.

Return the chicken breasts to the skillet and cook for an additional 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
