How To Make Mexican Scrambled Eggs

Ingredients
- 1 cup tortilla chips, crumbled
- 1 tbsp. vegetable oil
- 1/2 cup cheddar cheese, grated
- 1/2 cup salsa, jarred
- 8 eggs
Instructions
- Heat oil in a sautée pan.
- Cook salsa 30 seconds.
- Add crumbled tortilla chips and continue cooking an additional 30 seconds.
- Break eggs into a bowl and break yolks.
- Add to salsa mixture and cook until set, 3-4 minutes.
- Sprinkle with cheese and serve.
