Ingredients

  • 8 ounces chorizo, casing removed and crumbled
  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large non-stick skillet over medium heat. Add the crumbled chorizo and cook until browned and crispy, about 5-7 minutes.

  2. Meanwhile, in a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  3. Once the chorizo is cooked, remove from the skillet and set aside.

  4. Reduce the heat to low and pour the beaten eggs into the skillet. Cook, stirring gently with a spatula, until the eggs are soft and slightly runny, about 5 minutes.

  5. Add the cooked chorizo back into the skillet and continue cooking for an additional 2-3 minutes, until the eggs are fully cooked and the chorizo is heated through.

  6. Sprinkle with chopped cilantro, if desired, and serve hot.
