How To Make Huevos Pericos (Colombian Scrambled Eggs)

Whip up a light, but flavorful plate of huevos pericos for breakast today! These Colombian scrambled eggs also comes with tomatoes for a fresher meal.

Total: 20 minutes

Serves:

Ingredients

  • 2tspolive oil
  • 4medium scallions,white and green parts, sliced thin
  • 1medium roma tomato,or vine tomato, seeded and diced
  • 6large eggs,beaten
  • kosher salt,or adobo seasoning salt

Instructions

  1. Heat the olive oil in a medium nonstick skillet over medium heat.

  2. Add the scallions, then cook for 3 to 4 minutes until they soften.

  3. Add the tomato, then season with salt.

  4. Cook for 3 to 4 minutes until the liquid from the tomato evaporates.

  5. Add the beaten eggs to the pan with more salt to taste, then cook over medium heat, stirring a few times until just cooked.

  6. Serve warm, and enjoy!
