This Tex-Mex style breakfast dish brings a whole new dimension to scrambled eggs by adding some tortilla strips and salsa.

Ingredients

  • 8 eggs
  • 3 tsp butter
  • 3 tsp vegetable oil
  • ½ cup red pepper, chopped
  • 2 Roma tomatoes, chopped
  • ½ cup Monterey Jack cheese
  • ¼ cup salsa
  • 2 jalapeno peppers, chopped
  • 4 tortillas, cut into strips

Instructions

  1. Heat vegetable oil in a skillet over medium high heat.
  2. Saute the onion and jalapenos, seasoning with salt and pepper.
  3. Cook the vegetables until they’re soft, and the onions are translucent.
  4. Once vegetables are cooked, add in the tortilla strips and cook them for about two minutes or until they’re soft.
