This classic Passover dish is basically scrambled eggs with matzah. The perfect breakfast!
How To Make Matzo Brei (Fried Matzah)
Give a twist to your usual breakfast with this matzo brei recipe. Nothing too fancy as it consists of ingredients similar to your usual breakfast dish.
Saute onions in 2 tablespoons of chicken fat over medium-heat until it caramelizes.
Cover the pan and turn down the heat. Stir the onions occasionally for 15-20 minutes. Set aside.
Soften the matzo sheets in cold water for a minute.
Break the softened matzo sheets and mix it with eggs and caramelized onions.
Using the remaining chicken fat, cook the matzo mix in medium-high heat.
Put the matzo brei on a plate and garnish with parsley. Serve.
Matzo brei can be served sweet as well. If you want your matzo brei to be sweet, you need to use milk, eggs, sugar, and some butter. Soften your matzo sheets in milk and mix it with the eggs. Instead of chicken fat, you need to cook your matzo brei in butter. Garnish it with cinnamon and some confectioner's sugar.
